♦ 杏鲍菇、熟鸭蛋黄、乾辣椒
♦ 调料:酱油、水、糖、香油、胡椒粉
1. 杏鲍菇洗净滚刀切块,乾辣椒切段备用
2. 起油锅倒入杏苞菇,略為翻炒,盖上锅盖小火闷四分鐘,打开捞起备用
3. 另起油锅爆香乾辣椒,加入酱油、糖、香油、胡椒粉、些许水,再倒入杏鲍菇关火拌匀盛盘起锅
4. 取一鸭蛋黄,将筛网置於杏鲍菇上方,用汤匙压碎蛋黄
5. 蛋黄碎均匀落在杏鲍菇上即可出菜食用
